Many trends have come and gone since, but Everest remains a culinary gem, where every dish is classically designed, with dazzling flavors, satisfying textures, and treats for the eye. You won't find wild combinations, riots of spices and seasonings, and experimental chemistry here (fun though that can be at pleasure palaces like Alinea). Rather, you get simple, carefully constructed perfection, and there is definitely a place for that in modern fine dining. The service is what you want it to be, from reserved to chatty, and the place hums like a perfect machine. And the Alsatian wine selection is extraordinary. But after our last meal, it's high on our must-return list. The room is quite pretty - looks much larger because of the mirrors on the north and south walls. Ask for a table in the west room, preferably one with a view). Saturday evening was incredibly crowded, but the service was unhurried and impeccable. We chose the three course menu for $98 per person. Perfect amount of food. We each had a spectacular lobster appetizer-one of Everest's specialities. Huge pieces of lobster in a butter sauce with fresh herbs. I had the dover sole - a filet that melts in your mouth - and my husband had the halibut, which he loved. We were celebrating our anniversary and it was a perfect ending to a lovely day. We feel Everest has the lovliest dining room in Chicago --- the ambience, the settings, the art. There are many other nice extra touches throughout the dining experience, and our anniversary was also especially recognized. The service had glitches and the wine markup was excessive. Instead of asking people at the table which wines they wanted to drink, everyone got a glass for each bottle ordered. I suppose this is protocol, but from a practical perspective, there were just too many glasses on the table. The white wine was not chilled enough. White wine can often be overchilled, but this was the opposite. It came straight from the cellar which was probably a fine temperature for storage, but not for serving. I felt that the wine markup was excessive. I am familiar with prices and markup, and it was excessive at Everest. My wife and I enjoyed a nearly three hour dinner entranced by a view from the 40th floor that covered much of western Chicago and beyond. It was the food, wine and superb service that proved even more entrancing. The traditional Alsatian favorites are still very much front and center but do not shy away from any of the other dishes, particularly seafood. The breads and deserts made it even easier to envision a night in Paris. Our paired wines were superb and for those hoping to find fine French cuisine in Chicago this is a must. I was surprised at how empty the restaurant was on a Saturday night, but the meal was superb. We went for a four course prix-fixe with two starters (oysters and signature buttered lobster), an entree (duck breast with turnips) and a chocolate souffle for dessert. I had a vintage Dom Perignon champagne that paired very well with all of my food.
My only quibble is that we didn't really have a view since we were seated very far inside, nowhere near the windows. Oh, and the bread was disappointing. The bread service at restaurants like Grace, L2O and Sixteen is much superior.
I did like how tucked away the restaurant is. I have eaten venison at fine dining establishment even before I was in my teens--and I love venison. so this doesn't impress me.
